Ingredients
32 oz (4 cups) heavy whipping cream (~2 pints)
2 teaspoons fresh rosemary, finely chopped
1 teaspoon freshly cracked black pepper
Pinch of sea salt (optional)
Instructions
1. Make the Butter
Pour the 32 oz cream into a stand mixer or food processor.
Whip on medium-high speed until the cream separates into butter solids and buttermilk (about 12–15 minutes).
Drain the buttermilk (save for baking or cooking if desired).
2. Mix in Flavors
Rinse butter solids under cold water to remove remaining buttermilk.
Knead gently and add rosemary, black pepper, and salt.
Mix until evenly incorporated.
3. Shape & Chill
